First off, yum. I had the opportunity to take the Spork Foods Vegan Holiday Feast class over the holidays and I have to say my mouth still waters thinking of the delicious fare we created. The menu was the following: parsnip & potato puree, roasted brandy & ginger glazed seitan, spinach & carmalized onion puff pastry bundles (not purses, as explained in hilarious fashion), chocolate peppermint cream cheese bark (yes, it's as delicious as it sounds), all washed down with heavenly mulled cider. Jenny and Heather, the chefs and owners of Spork, created a culinary experience that felt equal parts food history, nutrition 101, and cooking class all rolled into two amazing hours. Students were asked to participate, to engage, and then at the end to sit around a group table and devour the prepared dishes. The shared experience, fun group of people, and out of this world food culminated in an experience I will not soon forget.
